No Google Maps for Amazon's new Kindle Fire

Amazon's new Kindle Fire will have mapping services via a tie-up with Nokia Oyj, according to two people familiar with the situation, filling a gap in the tablet's capabilities while snubbing Google's popular service.

The world's largest Internet retailer, which says its nine-month old Kindle Fire now accounts for one in five U.S. tablet sales, has teamed up with Nokia on mapping, the two people told Reuters.

Amazon will release at least one new version of the Kindle Fire next Thursday.

Amazon will also add location capabilities to the new Kindle Fire, which requires either a GPS chip or a process known as Wi-Fi triangulation, the people said on condition of anonymity because they were not authorized to speak ahead of Thursday's launch event.

Mapping services, which are popular features on tablets, typically include street maps, information about local businesses and sometimes traffic status. They can also support navigation instructions and third-party applications that depend on location information, such as travel services.

Location capabilities mark the location of tablet and smartphone users.

Google's Nexus 7 tablet, which competes directly with the Kindle Fire, comes with GPS receiver chips to support location and mapping functions.

The first Kindle Fire launched last year and at $199 costs half the price of the entry-level Apple Inc iPad, helping it rapidly gain consum?er acceptance. On Thursday, Amazon said its Kindle Fires had completely sold out.

Analysts say the 7-inch device helps drive sales of digital media such as e-books and music, which in turn propels core retail growth for the company.

Amazon may unveil larger versions of the Fire on Thursday in Los Angeles, analysts and media say, which will compete more directly with the iPad.

Although the Kindle now runs on an early version of Google's Android, which Amazon developed into its own operating system, it does not integrate Google Maps into the device. That means users had to access Google Maps via a Web browser, or download map apps from third-party developers.

A Nokia spokesman declined to comment and an Amazon spokeswoman did not respond to requests for comment.

Cooperating with Nokia may help Amazon develop integrated, or "native," mapping functionality for the Kindle Fire without relying on Google Maps. Nokia is one of the world's largest mapping companies, through its 2007 acquisition of Navteq.

Apple took a similar step earlier this year, when it dropped Google Maps in favor of its own mapping features for its next mobile operating system, known as iOS 6. As part of the switch, Apple signed a global licensing deal with TomTom, another leading mapping company, for its map content and related information.

In July, Amazon agreed to buy mapping startup UpNext, which specializes in detailed 3-D maps of cities and some sporting stadiums.?

Record-breaking stellar explosion helps astronomers understand far-off galaxy

ScienceDaily (Aug. 30, 2012) ? Astronomers took advantage of the most distant supernova of its type to probe a galaxy some 9.5 billion light years away. The light from the exploding star, discovered by Pan-STARRS with followup spectroscopic observations by the Gemini North telescope and the Multiple Mirror Telescope, confirmed that the gas environment between the stars in the distant galaxy is "reassuringly normal.

An international research team, led by Edo Berger of Harvard University, made the most of a dying star's fury to probe a distant galaxy some 9.5 billion light-years distant. The dying star, which lit the galactic scene, is the most distant stellar explosion of its kind ever studied. According to Berger, "It's like someone turned on a flashlight in a dark room and suddenly allowed us to see, for a short time, what this far-off galaxy looks like, what it is composed of."

The study, published recently in The Astrophysical Journal, describes how the researchers used the exploding star's light (called an ultra-luminous core-collapse supernova) as a probe to study the gas conditions in the space between the host galaxy's stars. Berger says the findings reveal that the distant galaxy's interstellar conditions appear "reassuringly normal" when compared to those seen in the galaxies of our local universe. "This shows the enormous potential of using the most luminous supernovae to study the early universe," he says. "Ultimately it will help us understand how galaxies like our Milky Way came to be."

The discovery of the dying star in this distant galaxy was made using images from the Pan-STARRS1 survey telescope on Haleakala in Maui, Hawai'i. "These are the types of exciting and unexpected applications that appear when a new capability comes on line," said John Tonry, one of the study's co-authors and supernovae researcher at the University of Hawai'i at Manoa's Institute for Astronomy. Tonry adds, "Pan-STARRS is pioneering a new era in deep, wide-field, time-critical astronomy -- and this is just the beginning." After the Pan-STARRS discovery, spectroscopic follow-up studies using the Multiple Mirror Telescope in Arizona and the 8-meter Gemini North telescope on Mauna Kea, Hawai'i provided the data used by the team to probe the gas of the distant galaxy's interstellar environment.

The spectra revealed the signatures of a distant ultra-luminous supernova, and equally important, the unique fingerprints of iron and magnesium within the distant galaxy that hosted the explosion. The galaxy itself contains a very young population of stars (~15 to 45 million years old) with a mass totaling some 2 billon Suns.

The ultra-luminous supernova explosion belongs to a relatively recently-identified and special breed of exploding stars. They are some 10-100 times more luminous than their ordinary less-energetic cousins and unusually blue in color. While the process leading to their demise is still being explored, evidence points to the central core-collapse of a star having as much as 100 times the mass of our Sun. The collapse triggers an enormous explosion that blasts prodigious amounts of heavier elements through the star's enormous outer layers before expanding into space.

Traditionally, astronomers have used two techniques to study distant galaxies: They would either; 1) look directly for chemical elements leaving bright imprints on the galaxy's spectrum of light; or 2) search indirectly for dark signatures in the spectrum of an even more distant quasar, which reveals chemical elements in an intervening system that have absorbed light along our line of sight.

Recently, astronomers have supplanted these methods with another: seeking dark absorption imprints in the afterglows of "gamma-ray bursts" (GRBs); these brief flashes are the brightest and most energetic explosions in the universe, but they fade away within hours. The method is also limited by the need for expensive Earth-orbiting satellites to first detect and pinpoint a burst's location with precision before astronomers can make ground-based studies.

"The beauty of studying distant galaxies using ultra-luminous supernovae as a tool is that it eliminates the need for satellites and offers more time for study," says Alicia Soderberg of Harvard University. "A typical ultra-luminous supernova can take several weeks to fade away."

The study by Berger and his team provides the ?rst direct demonstration that ultra-luminous supernovae can serve as probes of distant galaxies. Their results suggest that with the future combination of large survey and spectroscopic telescopes ultra-luminous supernovae could be used to probe galaxies 90 percent of the way back to the Big Bang.

ACE, workhorse of NASA's heliophysics fleet, is 15

ScienceDaily (Aug. 29, 2012) ? The Advanced Composition Explorer (ACE) is Earth's vanguard. Orbiting around a point 900,000 miles away between Earth and our sun, this satellite is ever vigilant, recording the combination of radiation -- from the sun, from the solar system, from the galaxy -- that streams by. None of this radiation can harm humans on Earth, but the biggest bursts of particles from the sun can flow into near-Earth space causing a dynamic space weather system that can damage satellites and interfere with radio communication transmissions and navigation systems.

When one of these bursts of solar material -- known as a coronal mass ejection or CME -- erupts from the sun toward Earth and passes ACE, the instruments onboard the spacecraft observe the increase in particles and automatically transmit this information to publicly available websites within five minutes. This offers a crucial advance warning of some 20 to 60 minutes to those who need to protect their technology from the effects of space weather, such as satellite operators, airplane pilots and utility companies.

ACE is, therefore, a crucial component of NASA's fleet, but its job as sentinel is, in fact, just a small piece of what ACE has accomplished since it launched on August 25, 1997. In its first 15 years, the spacecraft has helped determine the composition of the vast sea of flowing particles surrounding Earth. ACE also serves as a sentinel that helps measure the input -- the solar wind -- that drives the dynamics of the magnetosphere.

"We knew ACE would help with space weather monitoring, but fundamentally, it's a science mission," says Eric Christian, the deputy project scientist for ACE at NASA's Goddard Space Flight Center in Greenbelt, Md. "It's called a 'composition' explorer, because one of its main goals was to identify and study all the components of space radiation."

To tease out the various components of these space particles, ACE's nine instruments were designed to observe the wide range of particles in space, differentiating between various elements, energies and charges. ACE had two jobs: figure out where different kinds of particles originated and how they got an extra kick of speed, since a large number of the individual particles in space are traveling faster than scientists would expect based solely on the temperature of the material, suggesting that additional acceleration processes must be at work.

Based on ACE data over its first 15 years, we now have a much better understanding of the zoo of space particles and what causes their motion. The slowest particles with the lowest energy come from the solar wind, traveling at speeds of about 200 to 500 miles per second. Much quieter and less explosive than CME's, the solar wind nonetheless displays a complex and dynamic flow. For example, as high speed solar winds course off the sun, they can over take slower winds, and create shock waves to form giant, spinning eddies known as co-rotating interaction regions (CIRs) and these CIRs are an important component in accelerating particles.

Higher energy particles, known as solar energetic particles or SEPs, come from the sun, driven by fast CMEs and solar flares. These solar eruptions create what's called interplanetary shocks -- much like a bow shock from a plane -- that force the particles ever faster through space. These shocks can travel long distances, continuing to occur even as they pass by ACE, allowing scientists to study the acceleration processes in situ.

Particles also fly past ACE from the outer edges of the solar system and even from interstellar space. "Pickup" ions are believed to be created when neutral atoms from the galaxy collide with solar ultraviolet light or the solar wind to make charged particles. ACE cannot see the neutral atoms, per se, but can observe the pickup ions they create. Finally, at very high energies are the galactic cosmic rays, thought to be accelerated by shock waves from supernova explosions in our galaxy.

All of this information about different types of particles and what causes their acceleration contributes to our understanding of the giant space weather system of material and magnetic energy that surround the sun, Earth and the planets. By improving our understanding of that system, scientists can make even better use of the constant updates ACE provides about what solar energy is headed our way.

ACE science has also gone beyond the heliosphere. By observing galactic cosmic rays, the spacecraft has also advanced astrophysics understanding of how elements are created in supernovae. It is known that the intense heat from a supernovae -- the giant explosion at the end of a star's life -- fuses smaller elements into larger ones. The makeup of cosmic rays suggest that most of them come from the concentrations of massive stars in certain areas, galactic superbubbles, which are regions where many supernovae explode within a few million years. Recent observations of a cocoon of freshly accelerated cosmic rays in the Cygnus superbubble by the Fermi gamma-ray observatory support this theory.

Although there has been some degradation in ACE's instruments, fuel and power are sufficient to keep it functioning for another decade. Not only will this help keep ACE in place to take space-weather measurements, but it also lays the groundwork for continued science on how the sun's energy and the solar wind affect our near-Earth space.

As missions such as NASA's Radiation Belt Storm Probes (RBSP), due to launch at the end of August 2012, the Magnetospheric Multiscale mission (MMS) due to launch in 2014, and the Time History of Events and Macroscale Interactions during Substorms (THEMIS), launched in 2007, seek to understand how Earth's magnetosphere responds to incoming energy, it is ACE, lying outside the magnetosphere and facing the sun, which can describe what input from the sun caused those changes.

Egypt: military offensive in Sinai continues

CAIRO (AP) ? Egypt's state news agency says the military has killed 11 militants in the volatile Sinai Peninsula over the past month as the offensive it launched in response to an Aug. 5 ambush on Egyptian soldiers continues.

MENA quotes an unidentified military official as saying late Tuesday that "Operation Eagle" is still ongoing, and that forces have been redeployed around towns and border areas with Gaza and Israel known as hideouts of Islamic extremist groups.

"We will continue to chase the terrorists," the official said. The statement contradicts comments by leading Islamic radicals in Sinai who claim the military offensive was suspended as part of an agreement between the Egyptian government and militants to hold talks.

Data also suggests that more than half of British school children will not be walking to school when term starts next week.

A third of children who get a lift to school live less than a mile away, according to the survey by parenting website parentdish.co.uk.

Around two-thirds (68%) of parents would rather their children walk to school but give them a lift because of time pressures, according to the research conducted among 2,000 adults with school-age children.

Tamsin Kelly, editor of parentdish.co.uk, said: ?Jumping in the car for the school run may be the easy option, especially when we?re all so time pressed, but leaving a little more time to walk to school really does reap rewards for everyone.

?It?s a time to give your children some undivided attention without the demands of home and work, and a brisk walk really does set them up for the start of the day.?

Meanwhile, separate research finds that a third of Year 6 children are obese or overweight. Four-fifths (80%) of primary care trusts (PCTs) in England report an increase in the number of obese children aged 10 and 11 over the past five years, data analysts SSentif said. Just over a third of PCTs report an increase in obesity in children aged four and five.

More than a quarter of children living in the London Borough of Southwark were classified as obese in 2011, said SSentif, which analysed statistics from the Health and Social Care Information Centre and the National Child Measurement Programme. Richmond and Twickenham PCT has the lowest percentage of obese children but still has one in 10 children classified as obese.

Judy Aldred, managing director of SSentif, said: ?Childhood obesity is one of the most pressing public health concerns we have to tackle and yet rates have increased over the last five years, despite the Government?s attempts to curtail them.

?We?ve just hosted a fantastic Olympic Games and the legacy of those Games has to be to improve the health and fitness of our children. This is the perfect time to focus on this issue and to take steps to tackle the problem.?

IRD Celebrates Successful Year - New Zealand Taxation ...

New Zealand flagThe Inland Revenue Department has seen significant success in fighting tax evasion over the last 12 months, uncovering millions of dollars of tax discrepancies and recovering unpaid student loans.

Last week the Inland Revenue Department released its annual Compliance Focus report, detailing the Department?s efforts to improve tax compliance in the country throughout the last 12 months. Throughout the last year the Department has uncovered approximately NZD 135 million of discrepancies on tax returns, with nearly NZD 44 million of economic activity which was previously undisclosed and part of the hidden economy.

The IRD?s efforts to increase repayment of student loans has also seen success, with the Student Loan Overseas-Based Borrowers initiative resulting in NZD 27.4 million in extra repayments since its launch in October 2010.

As part of its ongoing efforts to increase compliance and weed out tax evasion, the IRD is ?using increasingly sophisticated methods to help customers do the right thing and identify the small number of taxpayers deliberately operating outside of the tax rules.?

The Department?s success has been attributed to a greater access to electronic tools to help check customers? data against information provided by tax authorities overseas and private organizations from around the world.

Through its administrative systems, the Inland Revenue Department has also been able to identify individuals who have filed false claims for Child Support and Working for Families entitlements.

If Judge Doty agrees, it will mean that the league?s lawyers screwed up.

Balanced against that technical application of the rules is fairness and common sense.? Regardless of the specific words or procedures used by the parties, the idea was to hit the reset button on all legal issues between the parties.? The league made concessions and the players made concessions and now the players are trying to avoid one of the concessions they made.? Some judges would decide, quickly, that such an outcome simply isn?t fair.

Compounding the potential for a finding that the NFLPA is pushing for a fundamentally unfair outcome is the fact that the players gladly signed off on cap penalties that necessarily exposed the existence of collusion in 2010 in order to get something the NFLPA needed ? a higher salary cap in 2012.? It?s unseemly, to say the least, for the NFLPA to now try to use that which it gave up to get a high cap number as the basis for seeking billions in collusion damages for allegedly depressed spending in 2010, especially since it should have been obvious to anyone paying attention that something fishy was going on.

Did the NFL engage in collusion in 2010?? Yes, in our opinion.? Should the NFLPA has done something about it in 2010?? Yes, in our opinion.? Is there something that doesn?t feel right about the NFLPA agreeing to the cap penalties that made the collusion crystal clear and then suing for collusion?? Absolutely.

But what we/I/anyone else thinks doesn?t matter.? Judge Doty will provide the first official word on the issue.? And if Doty agrees that the collusion case may proceed, look for the NFL try to appeal that decision immdiately, arguing that if the next level in the federal court system sees it the NFL?s way, there?s no reason to spend the time and money associated with developing the evidence that would prove collusion.

Even though that evidence should be fairly easy to find.

Twins' Diamond suspended 6 games by MLB

ARLINGTON, Texas (AP) - Minnesota Twins starter Scott Diamond was suspended six games by Major League Baseball on Friday for a pitch thrown near the head of Rangers slugger Josh Hamilton.

Diamond was immediately ejected after the left-hander's pitch behind Hamilton's head in the third inning of Thursday night's game.

The suspension and undisclosed fine were announced by Joe Garagiola Jr., senior vice president of standards and on-field operations for MLB.

Since Diamond is appealing the suspension, he remained on the Twins' active roster.

Twins catcher Joe Mauer had been hit by a pitch thrown by Roy Oswalt in the top of the third inning in the series opener Thursday night.

There were no warnings issued after Mauer got hit, but plate umpire Wally Bell quickly tossed Diamond. Manager Ron Gardenhire also got ejected after he charged out of the dugout to protest Bell's decision.

"Anytime in an umpire's judgment they go in the head area, we have to take care of business," Bell said after Thursday night's game. "I felt at the time that he had to be ejected for it."

Diamond insisted he was just trying to pitch inside and "that pitch definitely got away."

Hamilton said before Friday's game that he felt the ball whizzing by the back of his neck. But he didn't think Diamond did that intentionally.

"I don't think he was trying to hit me in the head, I just think the ball got away from him, but it got away from him and it was close," Hamilton said. "It was close, but like I said, I don't think he did that on purpose."

Hamilton said it was the closest a pitch has ever come to hitting him in the head.

"Behind the back of my neck, I could actually feel it when it went by," Hamilton said. "Just feel the wind from the ball when it goes by."

Old quarrels take new forms when the world?s power balance shifts. Japanese and Chinese nationalists squaring off over the Diaoyutai Islands (???) in the East China Sea are in the grip of geopolitical rivalries, jockeying for position on the new map that China?s rise has created. When China?s climb out of the economic trough began in the 1990s, the US was the world?s biggest power, Japan the second-biggest economy, and the Soviet empire recently deceased. Today, China is the world?s second-largest economy, Japan has stagnated for two decades and US power looks less impressive than it used to. As China flexes its muscles, the US shift in focus to the Pacific region has come not a minute too soon for some of Beijing?s nervous neighbors.

Asia?s maritime borders, and ownership of the oil and gas beneath the East and South China seas, are disputed between Taiwan, Vietnam, Thailand, the Philippines, South Korea, China and Japan ? but as China grows, so does its unilateral assertion of claims.

Two years ago it announced the South China Sea was a ?core interest,? in an unsuccessful attempt to stick a ?keep out? sign on the dispute for the US to read. Last month, Beijing elevated an island-based military garrison to city status, unilaterally giving it administrative responsibility over the entire South China Sea.

In the East China Sea, things have been equally tense.

In April, Tokyo Governor Shintaro Ishihara provocatively announced a public fund to buy several of the islands from private Japanese citizens. His action embarrassed the government and inflamed Japanese sentiments, provoking a reaction from Chinese nationalists: On Aug. 15, the anniversary of Japan?s 1945 surrender, a group of Chinese citizens landed and raised Chinese flags on the islands. They were swiftly deported to Hong Kong, precipitating the worst anti-Japanese demonstrations since 2004.

The animosity is much older. For centuries China saw Japan as a vassal state and loftily accepted tribute from a people they regarded as inferior. In the 19th century, when Japan cast off its feudal system and modernized, the shock to China was the greater because of its historic contempt. When, in 1894, Japan defeated China militarily, the humiliation was felt across the nation. China set out to learn from Japan?s transformation, but was powerless to prevent Japan?s imperial expansion and brutal occupation. Even after Japan?s defeat in 1945, Japan?s economic success and close relationship with the US perpetuated Chinese resentment.

That Japan is the focus of popular rage in China today is less surprising, given this history, than the fact that until the late 1970s visiting Japanese were greeted in China with professions of friendship. It was only after the Chinese regime sent tanks to crush the Tiananmen democracy movement in 1989 that nationalist animosity became official policy.

WASHINGTON (Reuters) - In an election dominated by multimillion-dollar donations, Democratic President Barack Obama's campaign is about to give small donors a new weapon by starting to accept text message donations for the first time in history.?

Marking the beginning of what could be a revolution in U.S. campaign finance, the Obama campaign said on Thursday it is wrapping up agreements with Verizon Wireless, Sprint Nextel Corp, U.S. Cellular and T-Mobile USA ? a unit of Deutsche Telekom AG ? to open the floodgate for donations by text this week.?

In the coming days, voters are likely to start seeing a message on video screens at Obama rallies, at the end of ads or on fliers, encouraging them "to contribute $10 to Obama for America, text GIVE to 62262." The numbers spells out "OBAMA."?

The campaign of Republican Mitt Romney, Obama's rival in the November 6 election, will soon start accepting donations as well, a campaign official said on Thursday. Its number is expected to be 466488 ("GOMITT"), already used to contact supporters by text.?

The Obama campaign said agreements with other phone companies ? including AT&T Inc, the second-largest after Verizon - were anticipated "in the near future."?

Thanks to their small size and spontaneity, text donations could empower smaller donors in a campaign marked by six-figure donations to outside groups to fund what is likely to be the most expensive U.S. election in history.?

Text donations, as they are currently approved, can be made anonymously but have to be capped at $10 per text, $50 per month and $200 in total for one candidate or campaign. Donations are prohibited from foreigners, people under 18 or corporations, which could also mean corporate phone accounts.?

The United States has more than 330 million wireless service subscribers. Almost nine in 10 U.S. adults have at least one cell phone line and about three-quarters of those use text messaging, according to the Pew Research Center's Internet & American Life Project.?

The fee question?
The process of political giving via text would be similar to giving to charity: A donor would send a short message to a text code, confirm intention and eligibility, and later pay for the donation as part of the monthly cell phone bill.?

But in this case, carriers and aggregators processing the payment would take a significant cut from each transaction, as they do with other non-charitable transactions, such as purchases of ring tones.?

Typically, these fees can take 30 percent to 50 percent of the money sent over text, industry experts told the Federal Election Commission earlier this year.?

The FEC has since ruled that carriers could offer discounts to political campaigns if they are negotiated by an aggregator firm, sort of middlemen between the two, in its regular course of business and applies to all its political customers equally.?

It remains unclear what percentage exactly the Obama campaign will be paying in fees.?

"Every avenue of fundraising that we have costs us money," said an Obama campaign official. "We pay the most competitive rates available in the marketplace to ensure our supporters have the greatest impact with their contribution."?

Anticipated pioneer?
Text donations had originally been expected to launch in early June, when federal regulators first approved the program. But the wireless carriers, whose support is key to facilitate the process, had caused a delay as they sought legal protections over fraud and profitability.?

The FEC ruled on August 15 that political campaigns are "solely responsible" for ensuring donations are not fraudulent or excessive, and that carriers could refuse text-donation services to campaigns not deemed commercially viable.?

On the day of the vote, fundraisers and campaign finance experts quickly pointed to the Obama campaign ? which had reached out to almost all of the FEC commissioners to urge their approval of text donations ? as the likely pioneer of the plan.?

"President Obama's reputation is that he's reaching out to the grassroots... He's more of a natural person to be an early adapter," veteran Republican digital fundraiser Peter Pasi said at the time, in anticipation of the launch of the program.?

A Pew Research study late last year also found that of all U.S. adults using cell phones to text, African-American and Latino phone users are the most active texters, and these groups are generally seen as Democratic voting blocs friendly to Obama.?

The Obama campaign, whose small-donor prowess helped it set fundraising records and win the 2008 election, has been raising a notably larger portion of cash from small checks than Romney.?

"As we push through the last 100 days of this election," the Obama campaign said on Thursday, "we remain focused on making this campaign as accessible as possible to the small-dollar donors that are the heart and soul of our organization."

Connecting With Family Over Food and Drink

My sisters and I started a cooking club; it?s one of the worst organized clubs I?ve ever belonged to. We don?t meet regularly and we often bail out at the last minute. But it?s our cooking club nonetheless and we have loads of fun.

The concept behind the club is to prepare meals and recipes we have never tasted or made before. We can get recipes from magazines, cookbooks, friends or some of our favorite food shows.

So when one of my sisters had watched an episode of Down Home with the Neely?s. One of the dishes featured was, ?Get Yo man chicken.? My sister explained to us how the Neely?s raved about this chicken dish. With all the moaning and groaning that was going on in the Neely?s kitchen she thought this dish would be fabulous and definitely worth trying.

Now with this particular sister she likes to do a little research first. So she logged onto the Food Network website and began her search. Within in minutes see found the Neely?s page and the recipe for the ?Get Yo man Chicken.?

Simone likes to peruse the recipes and read the reviews given by other viewers that have prepared the meal themselves. The reviews were stellar so ?Get yo man chicken? was going to be featured at our next meal.

We decided to meet on a Saturday evening to sample this savoir faire. I?m sorry to say The Neely?s ?Get Yo man chicken? was a total miss.

I have watched their show and thought that their food would be quite tasty. I?m shocked that this chicken dish wasn?t as good as we thought it would be. But it doesn?t stop me and my sisters from sticking our necks out there and trying another unknown recipe.

I definitely give a thumbs way up to spending quality time with my sisters.

Crust:
6 tablespoons unsalted butter, melted
1 1/2 cups crushed graham cracker crumbs
2 tablespoons sugar
Pinch fine salt
Brownie:
8 tablespoons (1 stick) unsalted butter
4 ounces unsweetened chocolate, chopped
1 cup packed light brown sugar
3/4 cup white sugar
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon fine salt
4 large cold eggs
1 cup all-purpose flour

Topping:
4 cups large marshmallows

Position a rack in the lower third of the oven and heat oven to 325 degrees F. Line an 8 by-8-inch square baking pan with foil so it hangs over the edges by about 1 inch.
For the crust: Lightly butter the foil with some of the melted butter. Stir the rest of the butter together with the crumbs, sugar, and salt in a medium bowl. Press the crumb mixture evenly over the bottom of the pan. Bake until golden brown, about 20 minutes.

Meanwhile, make the brownie. Put the butter and chocolate in a medium microwave safe bowl. Melt in the microwave on 75 percent power for 2 minutes. Stir, and microwave again until completely melted, about 2 minutes more. Alternatively, put the butter and chocolate in a heatproof bowl. Bring a saucepan filled with 1 inch or so of water to a very slow simmer; set the bowl on the pan without touching the water. Stir occasionally until melted. Stir the light brown and white sugars, vanilla and salt into the melted chocolate. Add the eggs and beat vigorously to make a thick and glossy batter. Add the flour and stir until just incorporated.

Pour batter into the prepared pan. Bake until the top is crispy and a toothpick inserted into the middle comes out mostly clean, with a few crumbs, about 40 to 45 minutes.

Remove from the oven and carefully position a rack about 6 inches from the broiler and preheat on low. Layer marshmallows across the top and toast under the broiler until golden, (keep an eye on it, it can go quick), about 2 minutes. Cool on a rack, gently removing the brownies from the pan using the aluminum flaps. Carefully separate any marshmallow from the foil and fold away. Cut into 12 (2-inch) squares.

Chef Gregory Gourdet of Departure Restaurant in Portland, OR took first place at the ninth annual Great American Seafood Cook-Off in New Orleans on August 11. His dish of slow cooked Oregon Chinook Salmon featuring Butter Clams, Bacon Dashi, Porcini, Roasted Heirloom Tomato and Crispy Sea Greens impressed a discriminating panel of judges and earned him the title of King of American Seafood.

The event, sponsored by the National Oceanic Atmospheric Administration (NOAA) and presented by the Louisiana Seafood Promotion & Marketing Board, is known for pitting up-and-coming chefs against recognized culinary greats from throughout the United States. The chefs were asked to create unique dishes with domestic seafood, and utilize fish thats native to their home states whenever possible. Prior winners include John Currence of City Grocery in Oxford, MS and John Besh of Restaurant August in New Orleans.

This year we had more chefs participate than ever before, raising the competition to a whole new level, said Ewell Smith, executive producer of the Cook-Off and executive director of the Louisiana Seafood Promotion & Marketing Board. Chef Gourdet secured an extraordinary win and were proud to have him join previous winners in serving as an ambassador for domestic and sustainable seafood.

The 2011 King of American Seafood, Chef Jim Smith of the Alabama Governors Mansion crowned Chef Gourdet during the official awards presentation. Chef Keith Frentz of LOLA in Covington, LA earned second prize with a dish of Louisiana Black Drum and Gulf Shrimp, while Chef Jack Gilmore of Jack Allens Kitchen in Austin, TX took home third prize with his Head-to-Tail Gulf Shrimp Fritter.

NOAAs Fisheries Service is the annual events chief sponsor and uses the cook-off to highlight to American seafood consumers the agencys commitment to a healthy marine environment and improving the nations domestic seafood supply.

NOAA has been involved from the start, and I am thrilled to see the event become bigger and bigger each year, said Sam Rauch, Acting Assistant Administrator for NOAA Fisheries, a long-time supporter of the Great American Seafood Cook-Off. The event has been highly effective in raising awareness of the value of our domestic fisheries, and it displays the skills of our countrys most talented seafood chefs.

Sig Hansen, one of the featured captains on Discovery Channels Deadliest Catch, co-hosted the 2012 Great American Seafood Cook Off along with Chef Cory Bahr of Restaurant Cotton, who is also a recent winner of Food Networks Chopped, and Ewell Smith, executive director of the Louisiana Seafood Promotion and Marketing Board.

Judges of the 2012 competition were: Chef Joho of Everest and Paris Club in Chicago, Brasserie Jo in Boston and Eiffel Tower in Las Vegas; Chef Johnny Nunn, executive chef of Brasserie Montmartre in Portland, OR; Liz Grossman, managing editor of Plate Magazine; Ron Ruggless, Bureau Chief at Nations Restaurant News; Vicki Wellington, vice president and publisher of Food Network Magazine; and Sam Rauch, Assistant Administrator for Fisheries at the National Oceanic and Atmospheric Administration (NOAA).

Earlier this year, organizers of The Great American Seafood Cook-Off encouraged states to hold a qualifying round or appoint a chef to compete in the event. Almost 30 years after discovery of a link between alcohol consumption and certain forms of cancer, scientists are reporting the first evidence from research on people explaining how the popular beverage may be carcinogenic. The results, which have special implications for hundreds of millions of people of Asian descent, were reported at the 244th National Meeting & Exposition of the American Chemical Society.

Silvia Balbo, Ph.D., who led the study, explained that the human body breaks down, or metabolizes, the alcohol in beer, wine and hard liquor. One of the substances formed in that breakdown is acetaldehyde, a substance with a chemical backbone that resembles formaldehyde. Formaldehyde is a known human carcinogen. Scientists also have known from laboratory experiments that acetaldehyde can cause DNA damage, trigger chromosomal abnormalities in cell cultures and act as an animal carcinogen.

"We now have the first evidence from living human volunteers that acetaldehyde formed after alcohol consumption damages DNA dramatically," Balbo said. She is a research associate in the laboratory of Stephen Hecht, Ph.D., a noted authority on cancer prevention at the University of Minnesota. "Acetaldehyde attaches to DNA in humans - to the genetic material that makes up genes - in a way that results in the formation of a 'DNA adduct.' It's acetaldehyde that latches onto DNA and interferes with DNA activity in a way linked to an increased risk of cancer."

Balbo pointed out that people have a highly effective natural repair mechanism for correcting the damage from DNA adducts. Most people thus are unlikely to develop cancer from social drinking, although alcohol is associated with a risk of other health problems and accidents. In addition, most people have an enzyme called alcohol dehydrogenase, which quickly converts acetaldehyde to acetate, a relatively harmless substance.

However, about 30 percent of people of Asian descent - almost 1.6 billion people - have a variant of the alcohol dehydrogenase gene and are unable to metabolize alcohol to acetate. That genetic variant results in an elevated risk of esophageal cancer from alcohol drinking. Native Americans and native Alaskans have a deficiency in the production of that same enzyme.

To test the hypothesis that acetaldehyde causes DNA adducts to form in humans, Balbo and colleagues gave 10 volunteers increasing doses of vodka (comparable to one, two and three drinks) once a week for three weeks. They found that levels of a key DNA adduct increased up to 100-fold in the subjects' oral cells within hours after each dose, then declined about 24 hours later. Adduct levels in blood cells also rose.

"These findings tell us that alcohol, a lifestyle carcinogen, is metabolized into acetaldehyde in the mouth, and acetaldehyde is forming DNA adducts, which are known major players in carcinogenesis," said Balbo.

Abstract

Alcohol consumption is a cause of head and neck cancer, as well as cancer at other sites. Acetaldehyde, ethanol's major metabolite, reacts with DNA to produce adducts, which are critical in the carcinogenic process. We investigated levels of N2-ethylidene-dGuo, the major DNA adduct of acetaldehyde, in DNA from human oral cells and peripheral blood cells at several time points after consumption of increasing alcohol doses. Ten healthy nonsmokers were dosed once a week for three weeks. Mouthwash and blood samples were collected before and at several time points after the dose. N2-Ethylidene-dGuo was measured by LC-ESI-MS/MS. N2-Ethylidene-dGuo levels in oral cells increased as much as 100-fold from baseline within 4 hours after each dose and in a dose-responsive manner (P
